Diallyl Disulfide is an organic compound which consist of sulfur atoms in its chained structure. It is a water insoluble liquid with a yellow color and has a strong crushed garlic like odor. It has a boiling point of 138 to 139 degree Celsius with a density of 1 gram per milliliter and a vapor pressure of 1mm Hg at 20 degree Celsius. Diallyl Disulfide is produced by the decomposition of allicin and is readily oxidized with hydrogen peroxide. It is a non-polar liquid which makes it soluble in lipids, hexane, toluene, fats and oils. This liquid is also used in food processing industries to enhance the taste of vegetables, fruits and meat.
