Tatrazine is a synthetic compound which is also known as yellow 5. It is an organic tri-sodium salt of tatrazine acid. It is colouring agent which is used to impart yellow to light orange color to the food products confections, cereals, gelatine products, icings, jellies, spices, dressings, snack foods, beverages, condiments, baked goods sauces and yogurt. Tatrazine has a chemical formula C16H9N4Na3O9S2 with a molar mass of 534.36 grams per mol. This compound on combination with preservatives such as sodium benzonate may link to hyperactivity in children. It can also be used in products like body wash, fragrances, hair dyes, soaps, creams, lotions and oral care items.
